Ingredients
- 1/3 cup (75 ml) butter, softened
- 1 green onion, chopped
- 30 ml (2 tbsp.) Flat-leaf parsley, chopped
- 1 garlic clove, chopped
- 15 ml (1 tbsp.) Lemon juice
- 4 chicken breast halves, boneless and skinless
- 1/2 cup (125 ml) unbleached all-purpose flour
- 4 eggs, lightly beaten
- 375 ml (1 1/2 cups) breadcrumbs
- Salt and pepper
- 4 toothpicks
- Oil for frying
Instructions
- In a bowl, mix all the ingredients. Shape mixture into a square of about 10 cm (4 inches) on plastic wrap. Cover and freeze on a plate for about 20 minutes or until firm. Cut the butter into four sticks. Refrigerate if to wait.
- Preheat the oil in the deep fryer to 170 ° C (325 ° F). Place a grid on a baking sheet.
- Using a small, sharp knife, insert the blade into one end of each breast half, cutting the inside to create a large cavity without piercing the flesh. Stick a stick of butter in each cavity. Close by basting with a toothpick to seal. Salt and pepper. Reserve.
- Place the flour, eggs and breadcrumbs in three shallow plates.
